XML version of sitemap is the one that is submitted on Google Webmaster.

Physical sitemap or simply site directory of all links and sections of you site might be you are talking too. It will be helpful both for users to browse your entire site and as well as for SE boths to crawl your site link structure.

Better have both physical sitemap and xml site.

i agree, submitting both xml and html sitemaps are better than one. It may help your sites crawled by SE's, It's easier for the SE's to see your pages at once.

You can submit sitemap.xml in Google Webmaster Tool which will track all result traced by Google. It will definitely help crawling inner pages of a site faster.

I submit my sitemap to google and sometimes ping it using pingler dot com for added benefit. I use xml only and have seen a huge benefit.
