White hat suggest creating content for users, not for search engines, and then making that content easily accessible to the spiders, rather than attempting to trick the algorithm from its intended purpose. White hat SEO is in many ways similar to web development that promotes accessibility, although the two are not identical. White hat SEO is not just about following guidelines, but is about ensuring that the content a search engine indexes and subsequently ranks is the same content a user will see.
You can see black hat SEO may work for you but if you are running serious business you will probably want to succeed in the long run. People who are using black hat tactics usually don´t have quality product or service and for this reason they don´t care about possible penalization in the feature. They know there is no future for them so they try to sell as quickly as possible. For this reason customers tend go away from such marketers. It is upto you now if you are interested to run serious business or not.

That is actually one of the better answers so far about the difference between white/black hat. I'm still wondering... is it possible to be using black hat techniques and not realize it, or would you have to really know what you are doing and be focusing on black hat techniques?

White hat is devoted to properly optimize a site to attract crawlers attention and to build long-friendly relationship with search engines.White hat is all that is allowed by the search engines.Blackhat will not survive for long term, as search engines update their softwares often and will penalize you and ban you for life.Black hat uses unethical ways just to get higher rankings. It doesn't follow rules and regulations.

Exactly! When you look at all the big authority sites out there many of them are using blackhat techniques.
Copy your competition. If they can get away with it so can you.

As per Wikipedia, white hat seo is the process of improving the visibility of a web site or a web page in search engines via the "natural" or organic search results. While Black hat seo are those techniques that search engines do not approve of and attempt to minimize the effect of, referred to as spamdexing.
White Hat SEO is merely effective marketing, making efforts to deliver quality content to an audience that has requested the quality content. Traditional marketing means have allowed this through transparency and exposure. A search engine's algorithm takes this into account, such as Google's Page-rank.
Black hat SEO attempts to improve rankings in ways that are disapproved of by the search engines, or involve deception. One black hat technique uses text that is hidden, either as text colored similar to the background, in an invisible div, or positioned off screen. Another method gives a different page depending on whether the page is being requested by a human visitor or a search engine, a technique known as cloaking.

I have seen a lot of SEO companies use black hat techniques to customer sites. This is a real shame, and 99.9% of the owners of the Internet have no idea about what is happening and how the practice can hurt their search engine rankings in the long term.

Black Hat SEO methods are designed to manipulate and deceive the search engines and to give companies an unfair advantage over their competitors. Generally this technique is not acceptable by search engine whereas White Hat SEO is reverse of Black Hat SEO that includes pure techniques and which are acceptable by search engines.
