http://www.google.com/insights/search/, wherein you can compare the volume of each searches (per country, or in general) so that you would know what is the best keywords to use

Usually there is a niche in every theme. General terms are very hard to target but also produce less relevant traffic. The more precise terms with less searches and less results and less pages with that title could be considered niches. People that search specific terms usually are buyers. They produce the most relevant traffic because they know what they want and there is no room for interpretations.
Example:
heart : 790.000.000 results, 2,740,000 Avg search volume
heart diseases : 10.100.000 results, 4,400 Avg search volume
heart disease symptoms : 1.380.000 results, 2,900 Avg search volume
heart disease signs and symptoms : 368.000 results, 91 Avg search volume

The best way to find the best keywords for a particoular niche is to be an expert of the niche. No online tools will tell you every possible keywords that a person can use. You have to think as a searcher would. Use your brain, do not rely on tools only.
