How true is it that the corresponding Google Ads are thematic with the content of the incoming/outgoing mail?

E.g. if my mail is on job application, the Sponsored Ads I might see are Naukri.com, Monster.com, etc. in India.

Yes you are right the ads are disply related to your mail.
