If I leave 5 comments on high PR blog of my niche, does google count that as 5 back links to my site from a good quality site? Or does google count them as 1 since they're all from the same site?

It depends whether that site is a do follow site or not. On my experience I got a couple of backlinks from a do follow site that I commented. The chance of getting many backlinks from a site increase when there's a top commenter widget in it. Just a tip.

it really depends on your comment.... because, if it's look like a spam comment use to link farm the site so it's useless....

If you comment on different post in same blog it will be counted differently.

Each and every time you should comment on different blogs because google want links from different domains. Suppose you comment on too many post of same blog then it is not worthy it is waste of time.
Because power of that link is already given to your site.

Take one example : I have one website and one blog. Blog is do follow and pages got good pr and I comment on each page. If google will give the more power to that link then every one should do same and then there is no meaning of SEO.
